Seafood appetizer. This appetizer is a great summer starter. Get a frozen 1 lb. package of mixed seafood (clam, scallop, squid, mussel,shrimp and sometimes octopus) at Trader Joe or Costco. Coarsely chop 1/4 onion, 2 stalks celery, 1/4 red bell pepper and parsley.
Bring 4 cups water to boil and add frozen fish mix into the boiling water and turn off heat. Let stand for 5 minutes, pour off water and keep fish in strainer on ice cubes to chill. Prepare a marinade of juice of 2 limes and two lemons. Put fish, juice, and veggies in a covered bowl and add 1/4 tsp garlic powder. Let marinate overnight . When ready to serve, put fish mix in a cocktail glass or goblet with i TSP marinade and add Clamato to fill the glass. Add 1/4 tsp. Roasted Green Chile Butter (or more to taste), salt and pepper to each portion and stir in well. Serve cold. The chile butter adds a nice dimension to the fish cocktail.
