Ingredients
For the Meatloaf:
2 lbs. ground beef (80/20 for best texture) or ground turkey.
1 small onion, finely chopped
2 cloves garlic, minced
¾ cup breadcrumbs (or uncooked oatmeal)
1/3 cup milk
2 large eggs
¼ cup ketchup
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp black pepper
1 tsp dried oregano (optional)
1 tsp smoked paprika (optional)
Two to three tablespoons of Roasted Green Chile Butter

Instructions
- Preheat oven to 375°F (190°C). Grease a loaf pan.
- Sauté the onions and garlic in a bit of oil until softened, about 2-3 minutes (optional but enhances flavor). Let cool slightly.
- Mix the meatloaf ingredients in a large bowl—combine ground beef, sautéed onions/garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, and seasonings. Mix gently (don’t overwork the meat).
- Place half the meatloaf ingredients into a loaf pan.
- Spread the Roasted Green Chile Butter on meatloaf. Add more for a real kick.
- Place rest of prepared meatloaf on top, and using hands, tuck top layer well around bottom layer to seal in Roasted Green Chile Butter.
- Bake for 45 minutes, or until the internal temp reaches 160°F (71°C).
- Rest for 10 minutes before slicing. You should see beautiful slices with meat, roasted chile butter,and meat. Serve with mashed potatoes and roasted veggies.
